Making Kombucha at home is easy and requires only a few ingredients, that’s one of the reasons I find it to be such an affordable and healthy soda alternative. Not only do you only have to buy a SCOBY once and black tea isn’t that expensive; you get to control the quality of ingredients you’re using.
To get started, you’ll need a few things such as a gallon glass jar, small pot, coffee filter, rubber band, 14 cups filtered water, 1 cup of cane sugar, six tea bags (black or green), or 6 tsp loose leaf, your kombucha starter culture, thermometer, funnel, and smaller (16-32oz) airtight bottles to store your finished brew. Once you’ve got the ingredients, all you need to do is follow the instructions provided below, and you’ll have your own Kombucha in no time.
Kombucha Instructions

- Bring 2 cups of water to a boil and remove from heat.
- Place tea bags in the pot and steep for 5-10 minutes before removing them.
- Add sugar and stir until fully dissolved.
- Add the sweetened tea mixture to the gallon jar and fill the rest of the way with cool filtered water. Leave enough space to add your culture, about 3-4″. The temperature should be 75-85F.
- Gently stir the entire contents of starter culture pouch in with the sweetened tea mixture. Secure the coffee filter over the opening of the jar with the rubber band.
- Place in a warm area for 7-21 days. After a week taste test your brew. Too sweet? Let it sit longer.
Second Fermentation:
- With clean hands, remove the SCOBY from the brew jar and place it in a clean container. Measure 1-2 cups from your brew jar and add it to the new container with SCOBY. This is the starter for your next batch. Follow the same steps as before.
- Take your clean bottles and add flavorings or fruits.
- Using your funnel, carefully pour the kombucha into the bottles, leaving about 1-2″ of headspace.
- Leave bottles at room temperature for one to 3 days. Carbon dioxide will build up, so pop the lid at least once a day to release the pressure.
- When you are happy with its fizziness, store in the refrigerator and enjoy!
Maintaining Your Kombucha SCOBY
